One-Pot Cherry Tomato & Sausage Rotini

  • Ingredients

    • 1 tablespoon olive oil
    • 1/2ย cup chopped yellow onion
    • 3/4ย lb hot or mild Italian sausage
    • 2 pints cherry tomatoes
    • 3 garlic cloves, minced
    • 2 tablespoons red wine vinegar
    • 1 box (12 oz) Carbe Diem!โ„ข Rotini
    • 3 cups water
    • 1 teaspoon kosher salt
    • 1/2 teaspoon ground black pepper
    • 1/2 cup grated Parmesan cheese
    • 4 ounces fresh mozzarella, torn into pieces, if desired
    • 1 cup chopped fresh basil
  • Steps

    1. Heat olive oil in a large skillet or Dutch oven over medium heat. Add onion and cook until starting to soften, about 5 minutes. Add sausage and use a wooden spoon to break into small pieces. Cook until well browned, about 5 minutes.
    2. Add cherry tomatoes, garlic, and vinegar to pan and stir to coat. Add rotini, water and salt. Increase heat to high and bring to a boil. Cover, and cook until liquid is absorbed and pasta is al dente, about 12 to 15 minutes.
    3. Stir pasta, and season with pepper and Parmesan cheese. If desired, heat boiler to high. Place mozzarella on top of pasta, then broil until cheese is melted and starting to brown, about 3 to 5 minutes.
    4. Serve immediately with chopped fresh basil.
