Carbe Diem is a 100% wheat-based pasta, just like traditional pasta, which is why our taste and texture are so spot on. How are we different? Wheat can be separated into its individual parts when milled. This gives us the ability to add back more of the protein in the form of vital wheat gluten, and more fiber through the addition of modified wheat starch. This reduces both the net carbs and calories at the same time. Modified wheat starch is also known as resistant wheat starch, and is recognized by the U.S. Food and Drug Administration as a dietary fiber.

Our pasta has 8 grams of protein per serving.

What is modified wheat starch?

Modified wheat starch can also be referred to as resistant wheat starch. Resistant wheat starch is recognized by the U.S. Food and Drug Administration as a dietary fiber.

Do you have gluten-free pasta?

Our products are 100% wheat-based just like traditional pasta. Because of this they also contain gluten.

What are "net carbs?"

Not all carbs are created equal. We look at net carbs to help people understand the number of carbohydrates that will actually be metabolized by the body. Simply put, the net carbs are the total amount of carbohydrates, minus the fiber and the sugar alcohols. This gives you the number of carbohydrates that your body will absorb. This is useful in understanding both the number of carbohydrates and calories your body will metabolize.

What is the serving size?

56 grams, or 2 ounces of dry pasta (before it's cooked).

Does it cook to a nice al dente?

Yes! It cooks and eats just like regular pasta. It doesn’t break apart in the pot like many other alternative pastas do.
