  • Ingredients

    • 12 ounces Carbe Diem™ Penne
    • ¼ cup butter
    • 1 small yellow onion, chopped
    • 2 garlic cloves, minced
    • ¼ cup flour
    • ¼ teaspoon nutmeg
    • 2 cups whole milk
    • ½ cup chicken broth
    • 2 teaspoons kosher salt
    • 1 teaspoon ground pepper
    • 2 cups shredded rotisserie chicken
    • 2 cups frozen peas, thawed
    • 2 teaspoons fresh thyme leaves
    • 1 cup grated Parmesan cheese
  • Steps

    1. Preheat oven to 375°. Butter a 9-by-13-inch baking dish.
    2. Bring a large pot of salted water to boil. Cook penne according to package directions until al dente, 13 to 15 minutes. Drain and set aside.
    3. Meanwhile, melt butter in a large skillet over medium heat. Add onions and cook until softened, 5 to 10 minutes. Add garlic and cook 1 minute more. Add flour and cook, stirring constantly, until mixture is light brown and smells nutty, about 2 minutes. Add nutmeg and milk, about 1/3 cup at a time, stirring well after each addition. Stir in chicken broth. At this point, you will have a thick sauce that coats the back of a spoon. Remove from heat and season with salt and pepper.
    4. Add penne, chicken, peas, and thyme leaves to skillet with sauce. Stir well to coat. Transfer to a prepared baking dish and spread in an even layer. Sprinkle with Parmesan cheese. 
    5. Bake until mixture is bubbling and browned on top, about 30 minutes. Cool for 5 minutes, then serve in bowls.
