    • 12 ounces Carbe Diem cavatappi
    • ¼ cup salted butter
    • ¼ cup flour
    • 2 ½ cups milk
    • 1 teaspoon ground mustard
    • ¼ teaspoon nutmeg
    • 1 ½ cups grated sharp cheddar
    • 1 ½ cups grated mild cheddar
    • 1 teaspoon kosher salt, plus more if desired
    • 1 teaspoon ground pepper, plus more if desired
  • Steps

    1. Preheat oven to 375°. Coat a 9-by-13-inch baking dish with cooking spray.
    2. Bring a large pot of salted water to boil. Add pasta and cook for 12 minutes, until just under al dente. Drain and set aside.
    3. While the pasta is cooking, melt butter in a large skillet over medium heat. Add flour and cook for 1 minute, whisking constantly. Whisk in milk ½ cup at a time until you have a thick sauce, about 5 minutes. Remove from heat and whisk in ground mustard and nutmeg.
    4. Mix cheeses together in a large bowl. Reserve 1 cup for topping, then stir remaining cheese into sauce until melted. Add pasta, season with salt and pepper, and stir to coat. Transfer pasta into prepared baking dish, then sprinkle with remaining 1 cup cheese.
    5. Bake for 25 to 30 minutes, until golden brown and bubbling. Serve immediately.
