    • 3 Persian cucumbers, thinly sliced
    • 1/2 cup rice vinegar, divided
    • 1/2 teaspoon kosher salt
    • 1 box (12 oz) Carbe Diem!â„¢ Spaghetti
    • 1/4 cup Chinese sesame paste or tahini
    • 1/4 cup peanut butter
    • 1/4 cup soy sauce
    • 1 tablespoon sesame oil
    • 1 tablespoon fresh minced ginger
    • 2 teaspoons brown sugar
    • 1/4 cup chopped green onions, for serving
    • 1 tablespoon toasted sesame seeds, for serving
  • Steps

    1. Place cucumbers, 1/4 cup rice vinegar and kosher salt in a small bowl. Toss to combine, then set aside while you cook the pasta.
    2. Bring a large pot of salted water to boil. Cook spaghetti according to package directions until al dente, 15 to 17 minutes. Drain.
    3. While the spaghetti cooks, add remaining 1/4 cup rice vinegar, sesame paste, peanut butter, soy sauce, sesame oil and brown sugar to a large bowl. Whisk until sesame paste and peanut butter have dissolved. Add hot spaghetti to bowl and toss well to coat in the sauce. If desired, chill noodles until ready to serve, up to 1 day.
    4. To serve, divide noodles between serving bowls and garnish with pickled cucumbers, green onions and sesame seeds.
