Shrimp Scampi

This shrimp scampi is a delicious, rich, and flavorful dish that combines tender shrimp with a buttery garlic and lemon sauce, served over perfectly cooked fettuccine noodles.

Ingredients

  • 1 sleeve (12 oz) Carbe Diem!™ Fettuccine
  • 6 tablespoons butter
  • ½ yellow onion, chopped
  • 8 garlic cloves, minced
  • 1 ½ pounds medium shrimp, peeled & deveined
  • ½ cup white wine
  • 1 teaspoon kosher salt
  • ½ teaspoon ground pepper
  • ½ teaspoon red pepper flakes (optional)
  • ½ cup chopped parsley
  • Zest and juice of 1 lemon

Steps

  1. Bring a large pot of salted water to boil. Cook fettuccine according to package directions until just under al dente, about 14 minutes. Drain, reserving ½ cup pasta water. 
  2. Meanwhile, melt butter in a large skillet over medium-high heat. Add onion and cook until softened, 8 to 10 minutes. Add garlic cloves and shrimp. Cook for 1 minute, until shrimp just begins to turn pink. Add white wine and ½ cup reserved pasta water to the pan, then season with salt, pepper, and red pepper flakes. Cook for 2 minutes. Add pasta to the pan and cook until shrimp is completely cooked, and liquid has reduced a little and coats the pasta in a silky sauce. 
  3. Remove from heat and sprinkle with parsley, lemon zest and lemon juice. Serve immediately.
