Shrimp Scampi

This shrimp scampi is a delicious, rich, and flavorful dish that combines tender shrimp with a buttery garlic and lemon sauce, served over perfectly cooked fettuccine noodles.

  • Ingredients

    • 1โ€ฏsleeve (12 oz) Carbe Diem!โ„ข Fettuccine
    • 6 tablespoons butter
    • ยฝ yellow onion, chopped
    • 8 garlic cloves, minced
    • 1 ยฝ pounds medium shrimp, peeled & deveined
    • ยฝ cup white wine
    • 1 teaspoon kosher salt
    • ยฝ teaspoon ground pepper
    • ยฝ teaspoon red pepper flakes (optional)
    • ยฝ cup chopped parsley
    • Zest and juice of 1 lemon
  • Steps

    1. Bring a large pot of salted water to boil. Cook fettuccine according to package directions until just under al dente, about 14 minutes. Drain, reserving ยฝ cup pasta water.ย 
    2. Meanwhile, melt butter in a large skillet over medium-high heat. Add onion and cook until softened, 8 to 10 minutes. Add garlic cloves and shrimp. Cook for 1 minute, until shrimp just begins to turn pink. Add white wine and ยฝ cup reserved pasta water to the pan, then season with salt, pepper, and red pepper flakes. Cook for 2 minutes. Add pasta to the pan and cook until shrimp is completely cooked, and liquid has reduced a little and coats the pasta in a silky sauce.ย 
    3. Remove from heat and sprinkle with parsley, lemon zest and lemon juice. Serve immediately.
