Spicy Spaghetti with Clams

Ingredients

  • 12 ounces Carbe Diem™ Spaghetti
  • ¼ cup olive oil 
  • 4 garlic cloves, minced
  • 1 tablespoon chopped preserved lemons
  • ½ teaspoon chopped Calabrian chiles, or 1 teaspoon red pepper flakes, plus more if desired
  • 1 cup dry white wine
  • 1 pound littleneck clams, scrubbed
  • 1 teaspoon kosher salt
  • ½ teaspoon ground pepper
  • ½ cup chopped parsley or chives
  • Lemon wedges, for serving

Steps

  1. Bring a large pot of salted water to boil. Cook spaghetti according to package directions until just under al dente, about 12 minutes. Drain.
  2. Heat the olive oil in a large skillet over medium heat. Add garlic, preserved lemons, and Calabrian chiles, and cook for 1 minute. Add wine and clams, then season everything with salt and pepper. Cover and cook for 3 to 5 minutes, until clams have opened. Add spaghetti and cook for 1 to 2 minutes more, until spaghetti is fully cooked, and everything comes together.
  3. Discard any clams that have not opened. Sprinkle pasta with parsley and serve immediately with lemon wedges.
