  • Ingredients

    • 1/4 cup butter
    • 1/2 large onion, finely chopped
    • 2 medium carrots, finely chopped
    • 2 ribs celery, finely chopped
    • 2 garlic cloves
    • 1 bay leaf
    • 1 pound ground turkey (93% lean) 
    • 1/2 cup red wine
    • 1 can (8 oz) tomato sauce
    • 1 cup whole milk
    • 1/2 cup beef or chicken broth
    • 2 tablespoons tomato paste
    • 1 teaspoon kosher salt
    • 2 teaspoons ground black pepper
    • 1 box (12 oz) Carbe Diem!â„¢ Fettuccine
    • Grated Parmesan or Pecorino cheese, if desired 
  • Steps

    1. Melt butter in a large pot over medium heat. Add onions, carrots and celery and cook until softened, 5 to 7 minutes. Crush the garlic with the side of your knife, leaving the skin on. Add garlic and bay leaf to pan. Add turkey to pan and cook until browned, breaking up with a wooden spoon, about 5 minutes. Pour in the wine and cook until slightly reduced, about 1 minute.  
    2. Add tomato sauce, milk, broth and tomato paste and bring to a simmer. Season with salt and pepper. Reduce heat to low and simmer, uncovered, until the flavors have melded together, about 1 to 1 1/2 hours. Discard garlic and bay leaf.  
    3. Thirty minutes before serving, cook pasta according to package directions until just al dente, about 15 to 17 minutes. Drain, then stir into pot with Bolognese sauce. 
    4. Divide pasta between serving bowls and top with freshly grated cheese.
